Ingredients
- 1 cup bulgur (soaked & drained)
- 2 tbsp hot pepper paste or tomato paste
- 1 lemon or lime, juiced
- 3 tbsp olive oil
- 1 tsp Aleppo pepper or paprika
- ½ head romaine lettuce, chopped
- 1 bunch cilantro, chopped
- ½ cup parsley, chopped
- ¼ cup basil (optional)
- Green parts of fresh garlic (must!)
- Watercress (optional)
- ½ tomato, finely chopped
- Salt, to taste
Instructions
1. Prepare the bulgur
Soak bulgur in water until soft, then drain thoroughly. This ensures it’s tender and ready to absorb the zesty flavors.
2. Make the dressing
In a mixing bowl, combine hot pepper paste or tomato paste, lemon juice, olive oil, Aleppo pepper, and salt. Mix until smooth.
3. Chop the greens
Finely chop lettuce, cilantro, parsley, basil, and watercress (if using). Dice the tomato and prepare the green parts of garlic.
4. Combine everything
Add the chopped herbs, lettuce, tomato, and garlic to the bulgur. Pour in the dressing and mix gently but thoroughly.
5. Let flavors meld
Allow the salad to rest for 10 minutes before serving. This helps the bulgur soak up the dressing and the herbs release their aroma.
6. Serve
Serve cold as a side dish, light lunch, or picnic salad. Enjoy every fresh, herby bite!
