Ingredients
Vegetables:
- 1 napa cabbage, cut into quarters, then squares
- ¼ cup salt (adjust as needed)
- Water (enough to cover cabbage)
- 3 medium carrots, cut into thin strips
- 1 medium Korean radish, cut into thin strips
- Asian chives, cut into chunky pieces
Sauce:
- 1 Asian pear, blended
- ½ onion, blended
- 1 tbsp paprika
- 1 tsp cayenne pepper (adjust for heat preference)
- 2 tbsp Aleppo pepper (adjust to taste)
Instructions
1. Prepare the cabbage
In a large bowl, toss the napa cabbage with salt, ensuring all pieces are coated evenly. Add enough water to cover the cabbage and place a weight (like a plate) on top. Let sit for 4–5 hours to draw out excess moisture.
2. Rinse and drain
After soaking, drain the cabbage and squeeze out extra liquid. Rinse thoroughly to remove excess salt and drain again. Add the carrots, radish, and chives to the drained cabbage.
3. Make the kimchi sauce
Blend the Asian pear and onion until smooth. Stir in paprika, cayenne pepper, and Aleppo pepper to create a spicy, flavorful paste.
4. Mix the kimchi
Pour the sauce over the cabbage and vegetable mixture. Wearing gloves, massage the mixture thoroughly to coat all ingredients evenly.
5. Ferment
Pack the kimchi into a clean jar, pressing down to remove air pockets. Leave some space at the top as it will expand during fermentation. Cover loosely and let sit at room temperature for 1–3 days, depending on how tangy you like it.
6. Store and enjoy
Once fermented to your liking, store in the refrigerator to slow down fermentation. Kimchi develops deeper flavor after a few days and can be enjoyed as a side dish, topping, or ingredient in recipes.
